Easy No-Knead Ramazan Pidesi: Turkish Pide Recipe
Ingredients
Dough starter:
- 120ml warm water (1\2 Cup)
- 120g flour (3\4 cup)
- 10g dry yeast (1 tbsp.)
Dough:
- 280ml water (1 cup+ 3tbsp.)
- 360g flour (2 cup + 1\4 cup)
- 8g salt (1 tsp.)
Sauce:
- 40g flour (1\4 cup)
- 20ml water (2 tbsp.)
- 50ml boiling water (3tbsp.)
- 1 egg yolk
Instructions
- Add into a bowl warm water, flour, and yeast. Mix until fully combined. Let it rise for 10 minutes.
- Pour the lukewarm water on top of the dough. Then, add flour and salt. Mix thoroughly until fully combined. Cover with plastic wrap and let it rise for 1 hour.
- When the dough is ready, divide it into 2 equal pieces. Roll each piece and place it onto a parchment-lined baking tray.
- Flat the dough to form a flat round disc. Cover it with a towel and the bread rise for 30 minutes.
- Meanwhile, prepare the egg wash: add into a bowl boiling water, room temperature water, egg yolk, and flour.
- After 3o minutes, brush the top with egg wash.
- With fingertips, make dots with a diamond pattern on dough discs leaving 2cm space from the edge of the circle.
- Sprinkle nigella seeds and sesame seeds on top of the bread.
- Bake it for 25-30 minutes at 250°C (482°F), or until slightly golden.
