Easy No-Knead Ramazan Pidesi: Turkish Pide Recipe



Ingredients

Dough starter:

  • 120ml warm water (1\2 Cup)
  • 120g flour (3\4 cup)
  • 10g dry yeast (1 tbsp.)

Dough:

  • 280ml water (1 cup+ 3tbsp.)
  • 360g flour (2 cup + 1\4 cup)
  • 8g salt (1 tsp.)

Sauce:

  • 40g flour (1\4 cup)
  • 20ml water (2 tbsp.)
  • 50ml boiling water (3tbsp.)
  • 1 egg yolk

Instructions

  1. Add into a bowl warm water, flour, and yeast. Mix until fully combined. Let it rise for 10 minutes.
  2. Pour the lukewarm water on top of the dough. Then, add flour and salt. Mix thoroughly until fully combined. Cover with plastic wrap and let it rise for 1 hour.
  3. When the dough is ready, divide it into 2 equal pieces. Roll each piece and place it onto a parchment-lined baking tray.
  4. Flat the dough to form a flat round disc. Cover it with a towel and the bread rise for 30 minutes.
  5. Meanwhile, prepare the egg wash: add into a bowl boiling water, room temperature water, egg yolk, and flour.
  6. After 3o minutes, brush the top with egg wash.
  7. With fingertips, make dots with a diamond pattern on dough discs leaving 2cm space from the edge of the circle.
  8. Sprinkle nigella seeds and sesame seeds on top of the bread.
  9. Bake it for 25-30 minutes at 250°C (482°F), or until slightly golden.
